Everyone saying "POLK" Salad Annie is correct. Yes, it is a green that is boiled for food. Yes, Tony Joe White wrote it and had the hit version. Yes, in his "Vegas years" Elvis was fond of performing the song.
Several others had the right answer and linked to a video so I can't really provide a "better" answer...just wanted to throw in my 2 cents that they are correct.

It's actually Polk Salad Annie, and Elvis sang it quite a lot. I'm sure it's been done by many others, but he's the most famous. It was written by Tony Joe White, and also performed by him.

That was Tony Joe White. His song "Polk Salad Annie" was produced by Billy Swan, who himself had a major hit with "I Can Help" in the mid-1970s. Tony Joe also wrote the song "Rainy Night In Georgia", which became a hit for Brook Benton in 1970.
