I go to my local coffee house. Some days I feel like cappuccino which is $3.25 for a double shot, and sometimes I feel like a large Italian soda which is $2.50.

This shop has a card, you collect 10 stamps, you get a free drink.

I tried to redeem my fully-stamped card for an Italian soda and the manager told me no. I said what's the problem...the sodas are cheaper than the coffee? She told me that the sodas are not eligible and I could either pay for the soda or order a coffee for free, any coffee on the menu, even the largest fanciest coffee at $4.50.

What could possibly be the reason for telling a repeat customer NO considering it is to the store's cost advantage, not to mention satisying the customer?

That's short-bus thinking at its finest.

The manager obviously doesn't realize that she potentially alienated a loyal customer and deprived the company of future revenue equal to hundreds (if not thousands) of times the cost of the Italian soda that she saved.

Ridiculous. Sounds like they might need a visit from Gordon Ramsay.

If it is a achain like Starbucks, they have to comply with corporate policy. They get paid by the parent company for the "free" coffee they give out with the card. If they were to give a soda for free with the card, they would not get paid for the soda and they lose money.
If it was not a chain store then it was simply a management decision or someone doing what the owner told them to do.
Unless the card says "any beverage" it is probably intended only for the coffee. If your card was punched when you purchased sodas, it probably should not have been and you are actually financially ahead on the transaction. I know that is a small consolation under the circumstances.
If you feel strongly enough that you were wronged in this transaction I would take it up with the store owner or manager. Maybe they will give another free coffee as a good will gesture.

It sounds like their cost for coffee is less than their cost for soda, and that's why they're pushing it.
Good customer service has always been the basis for repeat customers, but sometimes the staff is disinterested or not well trained. In this case, I would say the policy needs to be re-evaluated, though.

There may be offer only on cofee not on soda.
