I love eating at random spots and next week I am driving from Chicago to San Diego, going through Iowa, Nebraska, Colorado, Utah and then home to San Diego. Are there any great eaterys right off the interstates, like 5 miles off. we will be driving on the I-88 W, I-80 W, I-76 W, and I-70 W. any suggestions will be greatly appreciated.

Okay first of all when you get to Cali go to IN-N-Out Burger! Trust me, it is fast food and it is a chain that can only be found in CA, UT and 1 or 2 in AZ. It is the best stuff around! Everything is fresh and made daily, still family owned and the best burgers around! This is a California institution and you won't regret going there. The Double Double is the best thing around.
I live in STL and usually go the South route to SD, so I really am not much help with places on route however I do know of some good "food" sites that have great unique places for any journey so here they are and I hope they help you:

http://www.dinercity.com/

I use these sites to help us plan our roadtrips we have a thing about not eating at chains (except IN-N-Out Burger), we try to eat in local very quirky and unique places. Have a great trip!

There's a book called, I think, "Road Food" by a couple named Stern, which tells of out-of-the-way places to eat all over the country. I think they have written an up-date or sequel, also.
