CORN PUDDING:
1 cup sugar
3 teaspoons cornstarch
2 eggs, beaten
1 (15 ounce) can cream-style corn
1 (13 ounce) can evaporated milk (Pet brand preferred)
butter
CHEESY POTATOES:
2 lbs. hash browns, defrosted
1/2 c. melted butter
1 tsp. salt
1/4 tsp. pepper
1/2 c. chopped onion or 2 Tblsp. dehydrated onions
1 can cream of chicken soup
1 c. milk
1 c. sour cream
2 c. grated sharp cheddar cheese
Mix above ingredients and put in a 9"x13" pan.
TOPPING:
2 c. crushed Ritz style crackers (I use generics just fine)
1/2 c. melted margarine
Melt margarine and add crackers, mix. Sprinkle topping over potatoes and bake at 350F degrees for 45 minutes.

If you have a crowd coming, you can make twice-baked potatoes which are very easy to serve for a buffet.
For a special mashed potato dish, saute shredded cabbage and onion in butter until onions are cooked down. Remove from heat and add some minced garlic, salt and pepper. Mix this all into your mashed potatoes and serve with a dollop of sour cream.
Our family likes scalloped corn (corn in a cream sauce baked like a casserole). For a fancier version, grill corn on the cob and cut it off the cob to use instead of frozen or canned corn.

How about a Mashed Potato Pie?
1 refirgerated pie crust
2 c water
3 TBS butter
1/2 tsp each salt, garlic powder
1/8 tsp pepper
2 1/2 c mashed potato flakes
1/2 c sour cream
1/4 c bacon bits
1/2 c green onion,sliced
1 c shredded cheddar
2 small tomato, thinly sliced
1 TBS olive oil
garnish-green onion, sour cream
Cook crust and let cool.Meanwhile, combine water, butter, salt, garlic powder, and pepper. Bring to a boil. Remove from heat and add potato flakes. moisten. Stir in sour cream and bacon bits.
Sprinkle onions over bottom of crust, sprinkle with cheese. Spoon and spread potatoes over cheese. Arrange tomatoes around edge, overlapping if necessary. Brush tomatoes and potatoes with oil. Bake 15-20 min at 400. Cool 5 minutes. Sprinkle with green onion and dabs of sour cream on each slice if preffered.

1 cup cream-style corn

2 cups all-purpose flour
1 teaspoon salt
3/4 cup diced ham
oil for deep frying
PREPARATION:
Mix together corn, eggs, milk, flour, baking powder, salt, and diced ham. Heat oil in deep-fryer or deep kettle to about 365°. Drop batter by heaping tablespoons into deep hot fat; fry until golden brown.

CORN CASSEROLE
1 can cream corn
1 can regular corn
1 stick butter
1 (8 oz.) container sour cream
1 box Jiffy cornbread mix
Grated Cheddar cheese
Mix butter and sour cream. Pour 2 cans corn in bowl. Add sour cream mixture and cornbread mix. Pour in pan and bake 15 minutes at 350 degrees. Sprinkle cheese on top and bake 30 more minutes

grill corn add cream cheese, all other kinds of cheese, lime juice, and chile.
or make corn bread and add corn, cheese, jalapeños, and enjoy
about the potatoes... sorry cant help ya there
