I think any discussion of music in the 60s isn't complete without a mention of the original rock-poet and his band. When Jim Morrison and the Doors performed "The End", I think it reflected how a lot of people felt in that era of the Vietnam War, the expanding drug culture, and the conscious decisions made by many young Americans to really start questioning the authority of their government for the first time.

American Pie is a GREAT song for metaphor..but..it's actually a 70s tune.
Since your assignment seems to also be heavily linked to how 60s art (specifically music) reflected the politics/events of the time, then I'd go with:

King Crimson (1969) has alot of good lyrics, so does Aphrodite's Child(1968), and Pink Floyd (1965). But Jethro Tull (c. 1960) as well as Family (1967) cannot be excluded.

You have to add the Beatles, ' Ellinor Rigby'. It is loaded with metaphors. When you analyze the metaphores, it is a harsh condemnation of the Protestant Church. Written by Jonh Lennon - We studied it in English Litterature......writing the words to a sermon that noone will hear,....noone was saved,....died in the church and was burried along with her name......It goes on & on.......You must include this!
