I think that for a student guide, I would put something simple, ( some straight lines, bright colors, etc.) . And I would also put something that's familiar to that particular school, or that part of the country. (something that the student could identify with.)
And maybe some interesting and/or useful facts, (Just to sneak in a lesson or two.)
If the guide is for a particular school, I might let the students help answer this question. they could get involved, and participate in voting on or choosing the theme or style they like the best. Good luck with your project.

It would have to depend on the subject, wouldn't it?
Content of the subject.
Possible career opportunities or paths for students taking the class.
Tools or equipment used.
Your terms, "funky" and "stylish" are very subjective, so, are quite meaningless.
Perhaps I didn't understand the question.

I'd go for something clean and contemporary, pure type...
Or if you're thinking about showing students what graphic design is, use something that's Designed and used every day - how about the london underground map? change stations for areas of design.
