The particle theory simply means that matter is made out of small bits (for example, molecules, or, in the case of salts, ions).

So the thing dissolving (sugar, for example) and the solvent (water, for example) are also made out of small bits.

Then dissolving the sugar simply means that the small bits of sugar break off from the sugar lump and go wandering among the bits of water.

All this was worked out a very long time ago, and a man called Lucretius wrote a long poem in Latin about it.
