for burning use peat or wind fall timber they both give good smells

There are some herbs that give off a nice fragrance. Rosemary is very easy to grow and propagate, plus it is a very decorative plant. I have some growing outside in the ground (not in a flower pot) and it is thriving! Most herbs do well in poor soil. People who are into barbecuing a lot, throw a sprig on the coals. Has a really nice christmasey pine smell.

Yes, just be advised that they can "pop" if moisture is trapped in them. Not sure about smell, but you can use a light coat of glue and some iron filings to give colors when burnt.

Cedar and birch both are fragrant and pleasant to smell in a fireplace. You may find bouquets to add to your fire and add fragrance at your local garden center. having a pot of water nearby with spices in it will warm up and give off a pleasant fragrance as well.
