Because they taste good and you can't stop eating!

The real reason is that salt helps you retain fluid. If you have more salt, you will retain more, if you have less, you will retain less.

Well, you get thirsty from salty foods, and the sodium causing you to retain the water. Like you said it is only temporary.

Salty food causes intracellular fluid to come extracellular due concentration difference and causes water retention.
It cause effect on thirst center and makes you more thirsty on one way while taking mere and more fluid it causes water retention and makes you heavy and hypertensive. It also disturbs urinary system of the kidney by activating thirst center kidney reservation system is also activated and results in low urinary out put.

the salt uses water to stay in your body. its mostly water weight you lose in a day nothing major
