I'm re-routing a hot water line and was wondering which was best for going through the attic and the kitchen wall.

Contrary to what Glock said, M is thinner than L, not vice versa. Wall thickness, as someone said, is the difference. From thinnest to thickest- M L K. K is not cleaned with acid.
"Clean & Cap" copper is cleaned. It is available in M L and K, and is used for medical/industrial applications.

I have put many HWH systems in a very seldom did we use L it was M 90% of the time. Now as crazy as it sounds and we thought it was crazy too some comunities made us use L on the domestic and they didn't care about heating.
Most K copper in residental is for the water supply from the city to the house.
One other thing You said something about kitchen wall and attic. I personally think your nuts for running any kind of water where it can freez. The outside walls, craw spaces and atics you seriously want to avoid. All it takes is a power outade and those will be the first to freez and burst. Then you have a serious mess. Your wall will have to be open up and the cieling will proably come down too. I personaly would buy base board and run it around my zones and avoid those none cold areas. Just use how ever many feet of fin tube in your heat loss areas that they want you to and run bare copper through the rest.
Good luck and nother personal about say your nuts. Maybe it doesn't get that cold where you are. I have made a bunch of mony though during those cold no power storms we get every once in awhile.

It's the wall thickness of the tubing. This increases the pressure rating. K is the best, then L and finally M and the pricing follows suit. I would use L even though M may work for inside applications.

type k is for medical gases and is acid cleaned on the inside and very expensive.
type L is thinner than M but can be used in walls and attics with no problem. Lis cheaper than Mand there isnt a need to spend more.

Check with your local building codes. Some places will not allow you to run copper in a unheated space.

If you in the South were freezing temps are not a problem, L is just fine for your needs.
