Sweet Potato Casserole. My kids asked for this all the time and its the dish that I am required to bring to the big family Thanksgiving dinner:
INGREDIENTS:
3 cups mashed sweet potatoes
1 cup brown sugar
2 eggs, lightly beaten
1 teaspoon vanilla
1/2 cup condensed milk (you can use regular, but I like it sweet)
1/2 cup melted margarine

Topping:
1/2 cup brown sugar
1/3 cup flour
1/3 cup melted butter
1 cup chopped pecans
PREPARATION:
Combine first 6 ingredients. Pour into a buttered 1 1/2 to 2-quart casserole dish. Mix remaining ingredients together and sprinkle over top. Bake at 350° for 30 to 40 minutes, until hot and browned.
Sometimes, I don't use the pecan topping.....
Instead I'll let the casserole cook for 30 minutes, then sprinkle baby marshmallows all over the top, and place it back into the oven until the marshmallows start to brown (about 2-3 min).

My favorite is roast turkey. I brine it the night before, and then roast it. Here's the recipe:
10 cups water or apple or cranberry juice
1 cup salt
1/2 cup sugar
3 bay leaves
2 T each rosemary, sage, thyme, parsley
1 T peppercorns
Bring to a boil, and then simmer for 5 minutes to extract all of the flavors. Cool to room temp.
Rinse your turkey & remove the "guts" from inside. Put in a 5gal bucket breast side down. Pour cooled bring over turkey. Add additional ice, water, & beer (up to a 6pk) until the turkey is completely covered. Soak overnight (8-20 hours). Make sure the turkey stays cold. If you can fit the bucket in the fridge go for it, otherwise add more ice and it will keep the turkey cold enough over night.
Remove turkey from the brine. Rinse & pat dry. Season the inside cavity with poultry seasoning, S&P. Season the skin teh same way. Spray with olive oil spray. For added flavor, through a sliced onion & lemon into the cavity.
Bake at 500 for 45 min, then cover with foil and lower the temp to 350 and roast until the meat is done. White meat is doen at 160 & dark meat is done at 172.

Pecan pie-easy to make. 1 Cup Sugar, 1 cup molasses, 3eggs, a large spoonful of butter(not too much) Mix them together then add 2 cups (more or less) pecans. Bake in 9 inch pie crust at 375 for an hour-too little the innards will be to loose, too much the crust will burn.

What is there not to like about Thanksgiving food...it's all wonderful
stuffing, taters, cranberry sauce, pumpkin pie, sweet potatoes, gravy, green beans, corn......
I have old recipies that have been passed down for years and years. Use REAL butter in your desserts and fresh eggs.

My favorite is mashed potatoes too! But they have to be homemade! Last year I was with a family that didn't have mashed potatoes, so I made them. I think I will be doing it again this year...

I love turkey. I love eating it with stuffing, gravy, and cranberry sauce. But, I am 14, so I do not prepare it. Thanksgiving is one of my favorite holidays!
