Looking for a charming village, good locals and food, internet access, reasonable costs and hopefully a few pretty girls (being a single male)

I'm taking 2008 off to travel, and want to do the greek islands before the tourists hit, realising it's gonna be kinda quiet

Not looking to go clubbing. More restaurants, wine, beautiful scenery, friendly locals

During the period of January-March, it will not be a matter of not going clubbing. In most islands you may not even find a restaurant open. You may not find a hotel with heating. The sea will be wild and cold, the scenery will be wild, nothing like the typical enjoyable image of Greek islands in the summer. If however you do want to come so early, it's best to go to big islands, that have population even in the winter, such as Rhodes, Syros (you can easily visit Myconos from Syros). But you can also visit mainland winter destinations, such as the Meteora, Zagorochoria, Pelion, Delphi, Nafplio+Epidauros+Mycenae, Monemvasia. Look these places up, they're worth it. And of course Athens.

Jan - March is not very nice on the islands! Visit the mainland if you must!
I'm from Preveza - on the mainland the nearest airport in PVK but closed in winter only inland flights. Plenty of girls as we have a local college population. Also life is busy but not too busy - everything's open (unlike islands) the weather is one of the mildest parts on the mainland. You have acess to the incredible mountain villages www.metsovo.com and lefkada/Parga - also Ioannina is only 1.30hrs away by coach.
Great local cuisine. Ignored by foreign tourists (their loss) but adored by Greek tourists in summer.
I've been most places in Greece - this is the nicest you could ask for - it has everything!
Loads of villages. Also in Preveza in Feb with have a carnival - women only - the neighbouring villages also have theres to mark the 40 days before Easter (start of lent) Not sure when this falls next year but the town is decorated etc.

Most of the places mentioned in the above can be reached by this side of Greece (Delphi Aracovo only 4hr by car)

Why an island? Check out mainland Greece. Much more to do, but you'll still experience the true Greece without any tourists. Northern Greece is fantastic - totally unexplored (yet).

You can go to Myconos. It's an island that it never "close"!
