Definately explore the Medina (old city) and go into the Souks. The J'ma al F'na square is the centre of all the attention but I would recommend finding a guide to take you deep into the Souks and find the good shops, the ones around the edge of the square are full of touristy stuff and you'll get the hard sell. Bargain hard and half their first price they give you.
Take a horse and cart ride around the outside of the Medina and then through the chaos inside. Some of the spice shops are really interesting.
Go into Gueliz (the new town and find the gardens that belong to a famous designer - I can't remember the name sorry!) The garden is very beautiful and a real oasis in the madness that is marrakech. There are some interesting sites within the Medina and the palace is one and the other is the Saddian tombs.
Find a little tour company and book a day trip to the Atlas Mountains. The scenery is stunning and you get to visit a traditional Bedoiun community and the chance to purchase some handwoven rugs.
I would say 4 days is the perfect amount of time, any longer and you might feel a little jaded.
A must is a visit to the J'ma square at night, find a restaurant that overlooks the square (we sat 3 stories up) and just watch what goes on. At night the square comes alive and they set up open air cafes and cook whilst you wait - it's a real experience.
At all times watch your personal items, I had no problems but a friend of mine had a camera stolen. If you do get hassled a very firm 'NO' will get them to leave you alone. Some French words will also help you. A tip as well, take some branded pens with you to help bargain if you are buying anything - they love that sort of thing. We came back with an amazing wall hanging and some beautiful hand woven rugs, if I were kitting out a house from new and had loads of money to ship it back I would do ALL my shopping out there.

go to souk shopping be careful for beggars and pick pockets
dont forget to haggle to at least one third the price they say.
camel ride good fun
go for a morocan nite god fun wear comfy clothes for it no heels as sit on floor
if going by religous places covering arms not showing lots of skin shows respect
do not loo a muslim women n their eyes the men hate it and it is really bad it is a muslim country
id bring a umbrella too went august bad weather first time they had ran in over 30yrs that time of yr

There is loads to do in Marrakech and it is a great place to go exploring on foot. Here are a few tips and some advice you might want to consider but it really depends on what you and your girlfriend like doing. There are plenty of museums and that sort of thing. You should try to get your hotel to arrange for a guide to take you on a walking tour and see some of the historical sites like ruined palaces, tombs and the ramparts in the old town, which are all worth seeing. Otherwise get a guide book and pick the ones you are interested in and go by petit taxi. If you travel anywhere by petit taxi agree the fare in advance.There are also some nice gardens to wander through with your girlfriend (as long as she is not allergic to cactii!). I think the best two are called the Majorelle gardens and the Menara gardens. Be aware that you cannot drink or buy alchohol anywhere near the mosque in the old town, not even in a hotel or restuarant; though the new town is very westernised and full of bars and clubs if you want to go out and get drunk at night! I recommend YOU SHOULD DEFINITELY STAY IN THE OLD TOWN near the medina. That way you can go exploring round the most interesting places and not have to pay for the journey there and back. The souks are very interesting and worth wandering through (and getting lost in?). There are several entrances on Jemaa el-Fna square. If you get lost just go back in again and you will eventually end up on Jemaa el-Fna square. You can buy most things and they are organised into covered streets selling particular things e.g. shoes, jewellery, metalware, leatherware etc. Everything is very cheap in Morocco but YOU HAVE TO BARTER. They will most likely start you at a price that is many times what the product is worth. (If you don't know how to barter watch Monty Python's Life of Brian!) Jemaa el-Fna square has snake-charmers and stuff like that going on. The fruit they sell is fresh and safe to eat as is all food in restaurants and hotels. At night the square comes alive aswell.
YOU SHOULD DEFINITELY HAVE A HAMAAM AND A MASSAGE. I've never found anything like a Moroccan Hamaam except in Jordan but it was no way as good as in Morocco. There is a posh place somewhere that I went to called Bains de Marrakech which was great but you can get them at most hotels much cheaper. Wherever you go you will need to book it in advance. Food wise you will no doubt end up having Tajine at some point but MAKE SURE YOU ALSO TRY PASTILLA. It is the most heavenly dish it makes my mouth water thinking about it. Kebabs are good for lunch. Harirra is also nice as a type of soup. Couscous is a speciality and is a traditional main meal, especially on Fridays. Couscous will be fresh, hand made and home-made and cooked to perfection; thus it will taste much better than you've ever had before. Postcards should be posted only in a Post Office if you want to guarantee delivery. There is one overlooking the Jemaa el-Fna square which is impossible to miss. Its pointless me saying anything more because you will find it most fun if you go exploring yourself. I should repeat again that you and your girlfriend will love a Hamaam and follow it with a full-body massage for a truly relaxing experience. A romantic walk in the gardens will do no harm for you. And try Pigeon Pastilla.

There's a great restaurant in the Jema Elfna square which over looks the market itself. They do great Pastilla and the view over the market is wonderful!

Just got back three days ago from Marrakech. It was great.
Go to Club Med and get two tickets for you and your girlfriend, a huge buffet, great shows and beautiful people. I had a great time.
