I've only read a few vampire books, including Stoker's Dracula and Anne Rice's The Vampire Lestat, but the only vampire book I've ever enjoyed was Sunshine by Robin McKinley, since she's someone who usually does not write in the vampire genre.

Well, there's the undisputed queen of the genre...Anne Rice.
"Interview With The Vampire"
"The Vampire Lestat"
etc.
Then there's the master vampire novel "Dracula", by Brahm Stoker. Can't miss that.
"The Vampyre" by John Polidori
"Carmilla" by Sheridan Le Fanu
"Salem's Lot" by Stephen King
And the absolute best non-fiction study of the vampire folklore and history is "Vampires, Burial, and Death" by Paul Barber

Well, depends on how you like your vampires. There are many, many options out there - historical, beautiful, sexy, almost human, very evil, smart, zombie-like. Just about anything you can think of. There are vampire animals, cults, real-life vampires, vampires who suck energy, blood, money, etc ... A huge variety. The best way I have found to narrow it down is to look at what other kinds of novels you like to read, and then track down something in that some area.

I was going to say 100% the triology (so far) of Twilight, New Moon, and Eclipse, by Stefanie Meyer and then I realized... You're a guy. I mean, you may like them because my 18 year old fiance liked them, but to each his own. I personally liked them as a female, but that could be because they are from a female's point of view.
Another book I would reccomend is the one the only the true... Dracula.

Go with a classic. Bram Stroker's Dracula. Nothing after that has even come close to a good vampire story. they're all jsut copies.
