The plants grow above the ground. When the plant's flowers are fertilized they form "pegs" which push into the ground, and the nuts then form underground. When the bush dries, you pull it and the attached nuts out of the ground, let dry, shake off the dirt, then you have your peanuts in shells ready to go.

peanut is the common name for the Groundnut.
and as the name suggests the peanut as we know it ripens under the ground.
I have copied the exert from hutchinsons encyclopedia below, giving the full but brief explanation.
South American vinelike annual plant. After flowering, the flower stalks bend and force the pods into the earth to ripen underground. The nuts are a staple food in many tropical countries and are widely grown in the southern USA. They provide a valuable edible oil and are the basis for a large number of processed foods. (Arachis hypogaea, family Leguminosae.)

The grow underground and are actually not nuts at all but legumes / beans..which begs the next question, do people with peanut allergies have to avoid nuts or should they be more concerned about beans? And why do foods have to carry a warning that they may contain nuts or even traces of nuts instead of a more exact warning about peanuts?
