Jedis don't want to be senators

Yes Jedi can be Senators. In the New Jedi Order, there is a Mon Cal Senator that is also one of Luke Skywalker's Disciples. Jedi of the Old Republic generally steered clear of public office as their work as non-partisan diplomats would have been compromised. In the Order of the New Republic (and later, the Galactic Alliance), however, Jedi had to take on a larger role as many species wouldn't even talk without a Jedi present. Even after decades of living without Jedi, many peoples still respected them as the pentultimate of rationale and a rallying symbol of peace.

Sure... there's nothing which would keep a Jedi out of the Senate or to function as a representative of one's government.

I believe in the later Star Wars novels, Leia functions as a Senator (or Senator -type political figure) while at the same time she was training her Jedi abilities.

No, because all senators come from different planets and they can't be because it has to do with something about
the Jedi Council

Since Jedi are "taken" early in life, they probably have no ambition to do so. (Assuming they are fully committed to the Jedi Code)

It might have been personal opinion, but Obi-Wan said to Anakin that Padme' could not be trusted BECAUSE she was a politician.

I'm pretty sure it's not in their nature to meddle directly with the senate council affairs; it would be a conflict of interests.
