At 20 min after the hour, the hour hand is 1/3 of the way between hour marks. There are 12 hour marks around the 360° of the circle, so each is 30°. So the 7 is 210° around from 12. At 7:20 the hour hand will be at 210° + 1/3(30°) = 220°, and of course the minute hand will be at 20 after which is 120° past 12. So the angle between will be 220° - 120° = 100°.

If you consider that at 7:20 the hour hand is 1/3 of the way to 8 then you can figure it as from 7.33-4=3.33 then take that as a ratio of the 12 increments the clock is divided into 3.33/12=0.2775 then multiply that by 360 degrees to figure the angle = 99.9 degrees
Sorry my rounding 1/3 to .33 made a mistake actually = 100 degrees
