I would have to say 2 cars. One being the GT40. It not only showed that an American car could compete with the rest of the world, it could win and dominate.
Two would have to be the Mustang. For this simple reason, it might be the only car designed and built in the 60's that has survived to this very day.

For looks 1963 Ford Fairlane Sport Coupe.
For performance any year Ford GT-40 (this is not a Mustang).
1/4 Miler Thunderbolt.
Detroit Muscle car 68 Hemi Cuda (close second AMX).
All around affordable, durable, and reasonably fast the Fairlane Sport coupe, hi-po 289, Bucket seats, 2 speed two door, cantered fins and afterburner tail lights.

I liked the muscle cars. The best of them was the 1966 427 Cobra. The Cobra is on top of nearly all Muscle Car Lists.
Quarter mile ET 12.20@118 MPH showroom stock. Car Craft magazine, November 1965.
I personally like Chevy's, but you got to give credit to Carol Shelby for this one.

Hemi Cuda - you can't afford one now.
68 Dodge Charger RT
67 Chevy Camaro
Late 60's El Camino - my favorite
Pretty much any Mustang or Corvette, especially if they had the rare engine/suspension packages.
Don't forget the 1969 AMC Hurst SC/Rambler with the fold flat seats or the AMC AMX (cheap, fast and well, cheap).

1969 Camaro. The Camaro was still very new and it won all the races against Mustang. It also looks much better than the Mustang and all other american cars.
