Condensation

The same reason a cold beer can get's water on the outside of it. As the temperatures cool down the air molecules get 'closer together' bringing the water molecules closer as well and thus 'condensing' the molecules into water droplets.

During day time,the difference between the air temperature and the dew point temperature will be more.Hence the relative humidity will be less.During night ,the air temperature starts coming down and the above difference becomes less raising the relative humidity value.

Cooler air cannot hold as much moisture as warmer air. Thus, as the air cools, the relative humidity increases even though the actual amount of moisture in the air does not change. Recall that relative humidity is the amount of moisture in the air RELATIVE to how much moisture that air can hold.
