Anything by Bayside or the Amity Affliction. Both write amazing lyrics, and I think they actually have meaning behind their songs.
MourningTide also have very fun, "laid-back" lyrics; same with bands like Wendy Icon and Vains of Jenna. Bring me the Horizon also have very, uh, metaphorical terms in their lyrics; and Oliver Sykes has an amazing voice to kick.
Actually..now that you've made me think about it; a lot of bands have great lyrics :)
EDIT: Megan, I completely agree. TDWP have really nice lyrics; particulary "HTML r00lez d00d". 'Specially good for a Christian band, although UnderOATH have great lyrics, too.

Van Dyke Parks has written amazing lyrics for some Beach Boys songs... Search for "Heroes & Villains", "Surf's Up", or "Cabinessence" for example.

I loved the song "In the Air Tonight" (Phil Collins) and "Creep" (Radiohead) but then I found out what they were about and now they are in my top 5 favorite songs.
