Asphalt nearly has it. They negotiate your contract. They issue you your pay after taking their cut. Sometimes they help you put together your head shot or composite brochure, and make other suggestions about how you can become more saleable.

They generally negotiate the details of the acting job. When you are a commercial actor for instance, there aren't too many details other than be at place X at Y time.
If you are a sought after actor, then the actor gets to make some demands and the agent is there to make sure those details are in the contract.

Agents in large cities have many clients.
They audition actors they want to add to their client list.
They go Showcases to look for new talent.
They go to the theater to see the work of current clients.
They take their Agents to dinner, to discuss client business and decide if they want to keep their current clients or "get rid of them."
