For me it would have to be Disney (Epcot Centre) is an absolute must. The only problem being, one day won't be enough. Have a great time.

If your main goal is regular amusement park style rides, you can't go wrong with Universal. They have some of the best, and a good bit of variety. I particularly liked the Spiderman ride (it's a sophisticated virtual reality ride) and the Hulk rollercoaster -- that one blasts you off at full speed, via some kind of compressed air mechanism, rather than the usual "crank you up a hill and drop you" means.
If you're after a wider variety of stuff, Disney's EPCOT is a great park, and perhaps the only one you'd really want to consider for a single day without the kiddies. You can drink beer in a half dozen different countries, get a bit of that internation flavor in shows and shopping. They do have rides, but not on the scale of Universal. I will admit to having spent my one day there back in '93, with a buddy (end of a business trip), and both of us being beer fans, this was a great attraction.

Universal, best rides without a shadow of doubt. You'll be sorely disappointed by Disney unless you want Tiggers autograph! You can be very immature at Zeuss landing and on Popeyes Bilge Rat ride ( you WILL get soaked, but there are water cannons you can aim at people on the ride - top fun!) The Disney parks are so far apart, but Universal you should be able to see all of it - you'll be too big for some of the rides like the teradactyl ride - under 12's only!! Don't miss the Spiderman ride!

Islands of Adventure and Universal. I guarantee you will have a great time. Buy the two park pass as it will be cheaper.
If you get chance you should try catch The Blue Man Group you need separate tickets for this or you can buy combined park and concert tickets. There is more info on the website.
Top tip, If you intend seeing some of the shows, take lunch/dinner with you and get seated early. That means you get a much needed rest, eat and see a show all at the same time.
Wear comfy shoes/trainers and drink lots of water to keep you hydrated.
You are going to have the time of your lives.

Well personally disney and universal are both great in different ways, I dont think you can compare the two, to be honest..
If you like a bit of fun you could go to island of adventure, and go on the hulk, and duelling dragons, and if you can fit it in, go to universal its self cos the mummy is not to be missed, and spiderman is so much fun!!
Then in the evening, you could go drinking at city walk and have some fun there...
But if I was to pick for myself, I'd go for MGM studios, purely because I can't get enough of Tower of terror.
Rock and roller coaster is pretty awesome too...
I just love the whole atmosphere there...

Universal Orlando Islands of Adventure is your park. Marvel Super Hero Island & Jurassic Park areas have your name written all over them.
If you do a 2 park / 1 day pass, you can enjoy Islands of Adventure & Universal Studios. The Universal Horror Make-Up show is a great and very funny over at Universal Studios.
You might enjoy the restaurant "Mythos" at Islands of Adventure but there are some great choices at CityWalk too.
You'll get a little bit of a discount by buying your tickets here:

Since you are in your 20's I would suggest Universal Studios. For one thing, the crowds should be less than Disney and Universal is great for thrill rides.
Disney even one park is too much for just one day. The big thrill rides are normally quite busy, so I think you'd have a better time at Universal.
Have fun

Based on what you've said, I think you guys would really enjoy any of the parks in the area, but if you're really into rides, then I would definitely recommend Universal's Islands of Adventure the most because they have the largest selection of rides geared towards the "21-and-over" crowd.
I also highly recommend Busch Gardens in Tampa Bay if you guys don't mind a bit of a drive because that's the most fun theme park in the entire state of Florida for dudes in your age range.

I have to go with Magic Kingdom at the Disney World resort. It has all the classic rides like Pirates of the Carribean, Haunted Mansion, Big Thunder Mountain, Splash Mountain, Space Mountain and countless others. In my opinion Universal is just so so. They dont have half as many attractions as Disney and they got rid of the Back to the Future ride this year and that was their best one. Go to Magic Kingdom. I promise you you wont be disappointed! Best wishes and have fun!
