Not everyone does. I think those who do just don't like the taste of coffee, really.

Cream or milk cool it off a bit and make it easier to drink right away. Perhaps ths is the answer you are looking for.
Also, I find that my stomach doesn't like black coffee but can handle coffee with some milk with little problem. I also find that cream sweetens the coffee a bit, which is one reason I prefer milk.
