You would probably encore a whole swathe of Baroque sacred music gems. Try exploring works by:

Carissimi
Vivaldi (2 Glorias, Stabat mater, Nisi Dominus and many more)
Stradella
Alessandro Scarlatti
Handel
JS Bach
François Couperin

Try some of Lully's sacred music. There are several excellent recordings on the Naxos label at a very reasonable price.
