The style of the cabinet doors are cathedral. It is well made and the inset is recessed into the door. Can I get them out and would it be best to use a router or a saw?
I got an estimate from a woodworker guy and he wanted $500 to get it done for 18 cabinet doors. Is that reasonable?

Is he removing / reinstalling the doors the doors? Even if he isn't that does not sound too outrageous. $28 per door, it isn't a whole lot of work but it does require some degree of skill. If you are not confident you could do this yourself, than $500 seems a lot cheaper than new doors.

I own a cabinet shop and would charge much more than that. If you are doing 18 doors yourself, it will prbably take quite a while to do. So the question is do you have the time and skill it will take to make the job look right OR do you have the $500 OR can you just live with the cabinets the way they are?

If you want to do it yourself and assure a good job, you will need to make a jig and route out from the back side so there is a place to insert the glass. If you just take the wood panel out, you will not be able to get the glass in.

Know the type of doors.
A couple of considerations......
Can be done w/ a router & jig made for each size of door.
If the "woodworking guy" does custom or production cabinets
,he will likely use this method to maintain consistent openings.
Garbage in garbage out.....
Provide him w/ samples of the glass & discuss in detail what provisions are needed to secure the glass in the new openings & how you want it to look.
Maybe ask for a sample also.
Might see what the glass supplier recommends before work starts so the "wood guy" can make up any fixings they recommend & supply it to you or the glazier if they are diong the glass installation.
I have some plain inserts that are just puttied in like window glass.
Up to you.
Could be a project for an advanced DIY person ?.
Do not think $ 500 is unreasonable for that number of doors
Best regards

you need to take off a side piece dont punch it.
it will have small nails and probably glue in the corners but it should come off. slide the wood out and replace with glass.
