You might have a bad thermostat. Since you already took it off why didn't you just put a new one? You said the fan works so if the fan works and still having overheating with the new thermostat, then your water pump if going out. But now since you have the thermostat out, to check if the water pump is not working, take the radiator cap off and start the car and see if the coolant in the radiator is circulating, if not then ya, you water pump is out.

#1. Have your cooling system pressure checked for at least four hrs. Its easy and cheap to do. It will tell you for sure if you have any internal leaks, IE - blown head-gasket between cylinders, under intake manifold or around exterior of heads or internal cracks inside the combustion chambers.
Have your cooling system flushed with two part granular acid cleaner and neutralizer. Don't forget a new thermostat and radiator pressure cap. If this does not do the trick you're over due for a new radiator. Especially if you haven't changed your coolant every three yrs. You must have a thermostat. The cooling system is designed to operate at the value of the OEM thermostat. Proper heat raises the temperature of the motor oil driving off water vapors, fuel contamination, and blow by. If you don't have a thermostat. you'll get no heat inside your car in the winter time.

I took the thermostat out of a Cougar I had some years ago and it ran fine. Since its almost Winter, you are picking a tough time to have no heat in the car though. Don`t leave it out too long because sludge will build up in the engine.

That only works if the thermostat is sticking, so removing in no more work that installing a new one.

it may not be the thermostat that is causing the problem you could have a plugged up heater core. you can run the car without a thermostat but you will have no heat. thermostats are cheap why not just replace it?

if your having problems with overheating first check for radiator leaks, then check water pump, and then check for air in the system.

it might not be the thermasat, it could be as simple as a air locked, (air bubble) in the system.
