It varies between restaurants. Some will throw it away, some will try to preserve it, ~sometimes~ some will donate it, some let employees take it home. My sister worked at a place where they reused the sealed soup crackers even if it was covered in muck. Schools throw away perfectly good milk cartons (full and unopened, of course) because somebody touched it. So it all really depends on the restaurant. A good way to tell is by the cleanliness of the place. Chances are if it's clean, the leftovers will be thrown out, vise versa. To tell if the kitchen is clean, check the bathrooms. Statistics show clean bathrooms make for clean kitchens.

I used to work at a restaurant years ago and I know for a fact that they put some type of chemical on certain foods ( such as lettuce ) to make it last longer, meaning it won't turn brown as fast. That was about 20 years ago. I am assuming they have a lot more chemicals by now to alter food with.

I don't have to wonder about it because I used to work @ Shoney's. Day old stuff went right back on the buffet, that's where it goes. As a matter of fact, they would make up a huge pot of green beans for the week. you get what you need out of the cooler and the rest is there for the next day.

I used to work at a restaurant, and the one I used to work at, I can't reveal the name (Arby's) did not keep old sh#t from the day before, it was only stuff that could be 100% OK. So if ya ever eat at this place that I can't mention, you'll be allright.

Actually a lot of the food gets donated to homeless shelters, state run drug rehabilitation centers, and half-way homes. The restaurant then writes off the food as a donation when filing there taxes.

well if its a place like mcDonalds, they throw them out of the warmer drawer after 20 minutes. I read somewhere that McDonald's throws enough food away every day to feed a small country.

I don't, at least not anymore. Up until i worked for a restaurant, and what we didn't eat or take home ourselves, we donated.
