Get a pumpkin and gut it. Cut it down into manageable pieces. Cook the pumpkin. This can be done in the microwave or the oven Put the pieces flesh side down. Put water in the dish...enough to cover the 'meat' of the pumpkin. Cook it until when inserting a fork, it slips off and is tender. Pull the pieces out of the oven. Drain water and cool. Once the pumpkin is cool, then cut the 'meat' of the pumpkin off and place in a bowl. Discard the skin of the pumpkin. Either mash or place the pieces in the food processor until the pumpkin is smooth. Add same basic ingredients as is listed on the can (canned milk, eggs, spices, sugar, etc.) according to the amount of pumpkin yielded. Put mixture in a un-baked pie crust. Bake first 30-45 mins in a 400-425 degree oven, then reduce temp to 350 and finish baking until a knife inserted in middle comes out clean. I sometimes just use the 'pumpkin pie spice' rather than all the different spices. You can also decide the amount of sugar and salt that goes into your pie too.

This is from using an actual PUMPKIN and not the canned pumpkin.
1 medium sugar pumpkin
1 teaspoon ground nutmeg
1 teaspoon ground ginger
1 teaspoon salt
3 cups evaporated milk
4 eggs, beaten
2 (9 inch) unbaked pie crusts
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C).
Cut out top of pumpkin and clean out all seeds and strings from inside. Slice pumpkin vertically into 3 inch wide strips. Place strips onto a baking sheet.
Bake in preheated oven for about 1 hour. Once done, scrape the pumpkin from the skins, then beat with a mixer or puree in a food processor until smooth.
Preheat oven to 425 degrees F (220 degrees C).
Mix the nutmeg, ginger, salt, evaporated milk and eggs with the pumpkin puree. Pour mixture into two 9 inch pie crusts.
Bake in preheated oven for 15 minutes. Reduce oven temperature to 350 degrees F (175 degrees C) and bake for an additional 35 to 40 minutes, or until toothpick inserted into center comes out clean. Cool and refrigerate.
