I know of call centers who need Mandarin speaking agents. And they pay them well. And the schedule isn't night-shift. They start at 2PM Manila time. The call center that I'm familiar with is Sykes. http://www.callcenterdirectory.net/call-center-jobs/Sykes-Operations-Job-Openings-Philippines-390.html
Aside from the basic salary, you'll be getting a language allowance which is non-taxable. Mind you, that language allowance is higher than the basic pay.

I've encountered some of those Mandarin speaking agents, they actually don't know any English or Filipino. Maybe basic English would be a plus.

I'm not just sure about the age requirement, but I think they'll accommodate you because they really need Mandarin speaking agents.

I also saw some other job openings in other call centers (I don't know anyone working there though):

And, of course, the Mandarin tutoring is another option.

Goodluck with your jobhunting!

Why not try the government agency that could use your talent in the TOURISM industry of the Philippines. Mostly in the daily basis there are CHINESE tourist who wants to travel in the Philippines for a visit since you know the language of Mandarin and perhaps Fookien also you could be an INTERPRETER for the Philippines tourism industry.

You can do private tutoring. Learning Mandarin provides an advantage in this market where a lot of clients are wealthy Chinese businessmen. Also, your "student" could use the language when he/she decides to pick up a job in a Mandarin-speaking place.

How about become a tutor to those who are interested in learning the language?

Okay, I see your dilemma. How about:
• get a police clearance,
• visit a Buddhist temple,
• show your police clearance and resumé to the Buddist priest,
• request aid in looking for employment,
• follow-up for any development.

Zhù ni háoyùn. Good luck.

So you were born & raised in Hongkong? well, your job depends on on your education, skills & experiences. There's a lot of chinese restaurants in Philippines, w/ your experience maybe you can start as a waiter there..and soon be a manager. :)
