An open top bus ride would be a good idea. That way you get a flavour of Edinburgh. It goes from Princes Street past Edinburgh Castle and through the area that Greyfriars Bobby lived on a circular route. I enjoyed it immensely. It was about £7, could be more by now. There are two types, one with a tour guide and one with headphones and a recorded guide. If found the recorded guide quite good. Enjoy!

Walk along the Royal Mile in the Old Town, A very varied walk from the Castle to Holyrood Palace and the Scottish Parliament Building with time to look into St Giles' Cathedral

st marys close is an attraction i would really reccommend..its a real under ground tunnel of streets and closes with the story of occupants who lived there...its on the edinburgh royal mile...as is..the underground vault tours £7 which takes you to the spooky underground vaults that has so much ghostly history..its wicked!! there are loads of pubs too!! castle of course £15 to get in though, but worth it! edinburgh dungeons...like the london dungeon but with scottish people!! there is a ghost tour of london which is very good...all of what i am suggesting i have been to and reccommend, there are a few brilliant museums etc...and an all you can eat chinese restaurant....aswell as a tour bus that takes you through edinburgh and to a boat ride across the famous sea to a tiny cathedral..you also might see seals along the journey!!
