We have used eggshell in our last house and our current one. It has been fine in all the rooms in the house. One big advantage to eggshell is that is doesn't highlight small imperfections like semi-gloss or gloss does.
It has never been a problem to clean in either the kitchen or bath.
In both houses, we used oil based enamel for the wood work rather than latex. It seems to hold up better over the long haul.

Generally, you use semigloss for areas that will be exposed to moisture and humidity (kitchen, bathroom, laundry room, etc.). And you can use eggshell for everything else. We have a kitchen that kind of flows into the dining area, and then into a hallway that leads to the bedrooms. So, there was no definite transition (like a doorway) to separate the kitchen area from the dining/hall area.
What we did was pick a point where the rooms seemed to transition. We then put painter's tape (the blue stuff) along the wall and ceiling to create a transition point. We painted the kitchen in semigloss and removed the tape. After the semigloss dried for a couple days, we then put the painter's tape across the semigloss at the same line we made before. We then painted the transition and into the other areas with eggshell of the same color.
You can't even tell the difference at a glance. But, it's nice having the eggshell, because it doesn't reflect light and glare as much as the semigloss does.

I use semi gloss in my kitchen it works great if you get grease cleaned off right away....I painted three years ago and wash all the walls down once a year...

Semi gloss is always better for cleaning especially in the kitchen. Flat or no gloss paint will come off the wall when you clean it.

We have a satin finish in our kitchen and it is holding up well.
I would not put eggshell in a kitchen. I painted a hallway with eggshell finish paint and I cannot wait to re-do it. It is chalky looking and very rough. Hard to clean.

semi-gloss, if you use eggshell you'll be sorry. eggshell is right before flat.
