It depends. If you're going to have the laptop with you but you won't be jostling it around, then go to standby. If you are going to leave it in a spot where someone can access it, power it off. Make sure you do have a login password though.
Alternatively, you can also put the system on Hibernate if it's available. Hibernate acts like standby in the sense that it "remembers" the last state you left the computer in (including any open programs).

Standby preserver RAM contents and it will start in a couple of second when u turn it back on....i dah a HP notebook at work which i forgot into standby for a couple of weeks...nothing happended...but if u have a desktop...welll the power supply may stay on while the computer sleeps and this can be quite noisy in the room....but if u cann't wait for a cold restart then standby should do it

Better to turn it off, if your not going to use it for over an hour i'd be inclined just to turn it off, and save electricity.

I like hibernation. Its powered off, but when its turned on, restores the state when it was hibernated.
