It's the rate at which digested/undigested food passes through the bowel. I have a very slow peristalsis. This means that when I eat a really HOT meal, it's at least a day before I feel the heat when defecating. Nothing to do with constipation.

Peristalsis is the rhythmic contraction of smooth muscles to propel contents through the digestive tract.
In much of the gastrointestinal tract, smooth muscles contract in sequence to produce a peristaltic wave which forces a ball of food along the gastrointestinal tract.
Peristaltic movement is initiated by circular smooth muscles contracting behind the chewed material to prevent it from moving back into the mouth, followed by a contraction of longitudinal smooth muscles which pushes the digested food forward.

i think it is the motion inside the digestive system that gently moves the food along
the food does not simply fall into our stomach , peristalsis also means we could eat our food sitting on our heads
ie it is not gravity but perestalsis that ensures the food is gently carried to the stomach
