The transmission, for example, can be restored by the transmission rebuilders. If you ever bought a rebuilt tranny, where did the old one go? Directly to a rebuilder of transmissions.
Other parts can be recycled and sold to "body shops." The parts business is very large. "Copart" is a public company that handles parts needs of most insurance companies. The scrap yards will give you a couple hundred dollars, then strip your car down for parts that may fetch $1,500.

Well, I would say the worst would be to park it in the back yard and let it rust. Second worse would be to let some school kids whack on it with sledgehammers for a fee - it breaks the sledgehammers.
The best thing would be, since it runs, to donate it to charity to one of these operations that auctions them off and gives most of the return to a charity of your choice. If you can't take the itemized deduction, you still have contributed something.
