I'm looking for a formula to calculate pressure in a closed vial, if I heat 5ml of DI water at 160°C, what will be the pressure in it? Will it be stable if I keep de temperature stable for long periode time?

You need co-efficient of expansion

For liquid/vapor phase transition under pressure, check out the second link (phase diagram suggests an underlaying formula approach should work OK)

The rest is then "easy"
