A few good ones are, DOA 4, Virtua Fighter 5, also on Xbox Live there is Street Fighter 2.

Def Jam: Icon, Mortal Kombat, Soul Calibre, Street Fighter and Virtual Fighter are the only ones I'm aware of !

You cannot go wrong with Virtua Fighter 5. It was a PS3 exclusive but it came to the 360 plus there is online play.
