Our number system has to be a biggy. Before the crusades we were all using Roman numerals (Atlhough, to be fair, this system was developed in India).

Arch construction. Although the West had been proficient in the use of arches (Specifically the Roman arch). This had a great effect of European building, notably churches and cathedrals.

The idea that the world was, not only round, but the circumference of the globe, to within a few hundred miles. (Really a biggy this one.).

The capture Constantinople to the Turks; end of East Roman (Byzantine) Empire.

Why? I think you can understand the importance of Jerusalem and Istanbul to the Islamic Empire.
