My favorite combo is Ruffles with ridges and Onion dip made from sour cream and Lipton Onion Soup mix.
If I'm only eating chips, I like Pringles Sour Cream and Onion or Pizza flavors.
The BEST chips I've ever had were TOM's Mesquite Bar-b-que...can't find them anymore.
Also, out west you can buy a special brand of Fritos that is flavored with lime and light chili. They are killer!
For eating with mexican food or salsa, there is nothing better than white corn chips, ESPECIALLY if they are freshly made in a restaurant (Best: "El Indio" in San Diego).

Bettermade Barb-b-que chips. I only use French onion dip for regular potato chips though.

I like Lays' Kettle Cooked Jalapeno flavor chips. I don't usually eat them with dip, but I have eaten them with spicy bean dip and/or jalapeno cheddar dip and it is really good.

Brand doesn't matter as long as its sour cream and onion.
French onion dip.
