If it is the old style that uses a mercury filled switch that is twisted by a bimetallic coil, then being level is critical. If it is a modern programmable one with a solid state sensor, then crooked on wall is irrelevant. Crooked would look sloppy but never ruin the accuracy of the temperature readings.

Yes. Take the face plate off, level the thing, use two screws to secure it to the wall (there will be two holes for them) and snap the face plate back on. blam, done.

If the thermostat has a mercury switch the thermostat must be level for it to work correctly

if it has a mercury switch, yes. the mercury will expand and contract with the heat, changing the center of gravity in the switch, and moves to turn on or off.
