Change in voice. A change in the pitch of a person's tone, or a lot of stammering (umm, ah), or throat clearing could indicate a lie.
Unusual body language. If a person taps their foot a lot, fidgets with their hands, raises their shoulders, turns away from you or brings their hand to their face (to touch their chin or nose, etc.) -- in other words, if they act nervous or uncomfortable -- it could mean they're telling a lie. Also watch out for blushing (or becoming pale) and increased blinking.
Something sounds fishy. Making statements that contradict each other, are inconsistent or don't sound quite right are usually part of a lie.
Overly defensive. Sometimes when a person is lying they will become extremely defensive, refusing to answer any questions and even accusing you of lying. This may mean they have something to hide.
Changes subject easily. If someone is lying and you change the subject, chances are high that they'll go right along with it. A person telling the truth, however, will likely ask why you changed the subject and want to go back to it.
Humor or sarcasm. A guilty person will often try to change the subject using humor or sarcasm.

With some people that we know, the way we tell if they are lying is that their mouth moves. Otherwise, sometimes being too effusive or trying too hard to get you to believe them is a clue. Keeping space between you with their arms crossed sometimes shows that they are defensive. My Dad's best friend is a police Lt. and he told us that when a person lies their pupils dilate. I suppose you'd have to be close enough to see that! And that people tend to look to the left when they are trying to make up a story, or a lie. When our brain is accessing a memory we look to the right. I found that fascinating! It isn't fool-proof, because the police use other clues too and nothing in the world is fool-proof. But it was pretty interesting nevertheless.

You are right about the not looking you in the eye. People who are lying often put their fingers near their mouth , ot they will hold their mouth funny, pull on their ears.

Avoiding making eye contact and they become a little damp(sweaty). Or they want to change the subject pretty quick when you want to continue it. Or they become annoyed with you hehehe.

I knew a guy who would get nervous when he was lying and his eyes would blink really fast. It was actually quite funny to see.

You can tell by there heart beat by feeling near vibration on there chest or so. I hope this helped you.
