Didn't everyone know that most of the connections were through the father and not the son, as Tom Hagan later asserted? Didn't Sollozzo believe the Don when he explained that his connections would be jeopardized if it was learned he was dealilng in drugs? Wasn't it well known that Sonny was a hot head? And if so, how could anyone expect to do a profitable business with Sonny based upon a necessary minimal amount of trust and cooperation after murdering Sonny's father.

Yes, Sollozzo heard all of the Don's explanations, but, along with the Tattaglia family, he was greedy for the new drug business and saw Don Corleone as old-fashioned and outdated in his attitudes toward business. As far as he was concerned the Don was no longer a possible asset since he couldn't be won over; as long as he was alive, his influence in the city would probably have blocked their progress in this venture.

He believed that by eliminating the Don and winning Sonny to his view, he'd have as an ally the most powerful of the five families in the city and could then be successful in the drug business. He may or may not have intended to cover up the fact that he was behind the shooting of Don Corleone, but that may not have mattered anyway in partnering with Sonny.

Remember what they always said about somebody getting rubbed out? "It's not personal; it's business."

Vito didn't want to support the 5 families' involvement in the drug trade, the other families needed his connections and contacts with the government and law enforcement in order to be successful. They knew Sonny was a hot head and felt if they eliminated Vito, Sonny would tear the Corleone family apart. They hadn't counted on another son taking over.

The point is to demonstrate the Sicillian metality, or more appropriately the Machiavellian mentality, namely kill them all because if you cut or the head of a scorpion he may still kill you with his tail. In other words the other familiy was not as smart as the Corleones. Michael was the master of the night of 1000 knives, when he kills everyone in one move....
