Chicken Pesto Paninis
"A delicious mix of chicken, pesto, veggies, and cheese all melted together on flavorful focaccia bread. Simple, fast, and very tasty - a nice change from normal sandwiches."
INGREDIENTS:
1 focaccia bread, quartered
1/2 cup prepared basil pesto
1 cup diced cooked chicken
1/2 cup diced green bell pepper
1/4 cup diced red onion
1 cup shredded Monterey Jack
cheese
DIRECTIONS:
1.Preheat a panini grill.
2.Slice each quarter of focaccia bread in half horizontally. Spread each half with pesto. Layer bottom halves with equal amounts chicken, bell pepper, onion, and cheese. Top with remaining focaccia halves, forming 4 sandwiches.
3.Grill paninis 5 minutes in the preheated grill, or until focaccia bread is golden brown and cheese is melted.

It's a toasted sandwich!!! Which is made in a special appliance called a Panini Maker, which you have to buy, so they can charge you a lot of bucks to make a sandwich. I have never had one and I don't think I will. Another consumer rip off. And for Yuppie's to go out and spend more money to to say they ate one. You can't just have a Deli sandwich these day's, you have to have a Panini.

The term is used in English to mean a type of small sandwich. The actual Italian word is panino, not panini (panini is plural.) That's a common error when Italian words are used in English.

Pannini is a small loaf of bread that is cut in half to make a sandwich. usually cheese,meat tomatoes inside and pressed to the grill to make flat. The word Panini is plural and derived from the singular word Panino.

Traditionally, panini are made with cured meats like salami, pepperoni, or prosciutto. Using cured meats doesn’t require it to be fully cooked once on the grill. You will want to warm the sandwich through. While you can use any meat it is important to pick one that is thinly sliced. If you want to add more, do so in layers. The same goes for cheese. By using thinly sliced cheese it will melt easier.
