I like some of them.

Did you see The Lord of the Rings trilogy...The Fellowship of the Ring, The Two Towers, The Return of the King? They were done well. (Supposedly they are planning to make a movie of the prequel The Hobbit. It's coming out, perhaps, in 2009. I'm looking forward to it.)

From 1996, I enjoyed Dragonheart with Dennis Quaid.

I thought The Princess Bride with Cary Elwes (1987) was done well.

Ella Enchanted (2004) with Anne Hathaway was really cute.

I'm also looking forward to the movie of the 2nd book in The Chronicles of Narnia series: Prince Caspian. It's supposed to come out in 2008.

I suppose you could put The Pirates of the Caribbean in that category. I really liked the first one.

Addition: I hear they are planning on making Twilight into a movie. There's also talk of making This Present Darkness by Frank Peretti into a movie. Hopefully, they'll do it well.

Lots of them are coming out, now that we have the special effects to do them.

Lord of the Rings isn't on your list.
Harry Potter, if you're into that.
Princess Bride is a great classic (just don't laugh at the special effects)
I have yet to see "Pan's Laberynth". Either people loved it or hated it.
Pirates of the carribean

Coming soon is:
the golden compass (based on the book by phillip pullman)
stardust (based on the book by neil gaiman)
the Spiderwick chronicles (books by Holly Black and illustrated by Tony DiTerrlizzi)
The seeker (based on "the dark is rising" by susan cooper)

I did not like Eragon or Ella Enchanted. I thought they were poorly written and performed.

i <3 them too. haven't really seen any worth mentioning though...no offense but just seeing the previews of eragon put me off it. didn't look like it measured up to the book.
