The earth is roughly round because of gravity. It is fat across the equator because of centrifugal forces. The earth spins faster across the equator than at the poles creating the bulge around the middle.

The Earth isn't round, it has mountains and valleys and only appears round if you can see it from a distance in space. Even then it isn't a perfect sphere, it appears a bit squashed.
