Why do animals such as dogs, cats, birds, etc all look exactly the same whilst humans all look different?

Are you serious? Every animal is different from another unless they are clones. Cats are different colors, sizes, personalities; just like people. stay in school.

Well, for one thing, different breeds of dogs can look very different. Within a particular breed of dog (or cat, or bird), there has been a conscious effort of breeders to breed the animals in such a way that preserves the favorable characteristics of the breed. So the reason that all german shepherds look similar is because we have inbred the animals to a point where there is relatively little genetic variability. Therefore, when you mate two german shepherds, there isn't much scrambling that takes place, since the parents were pretty much identical already.

Inbreeding can also have undesirable consequences, because what you can end up doing is unmasking deleterious genes. That's why we discourage it among humans, and also why hybrid breeds of animals sometimes have a little more genetic vigor.

Every animal of the same type and every person are basically the same. They may all have different features, and be different sizes, but are the same. If in animals you are talking about say a lion and a panther. They are not the same. A lion and a panther can't mate and have cubs any more than a monkey and a baboon can. The genes are different. Humans all have the same basic gene structure and therefore can interbreed, such as Arabic and American or blakc and white, etc.

Say there are some identical twins. They seem to be the same at first but after getting to know them you can tell the difference.

If you had two dogs who were brothers you would know which one is which, but someone else might not be able to tell the difference.

I would say it is a mental skill, being able to tell one twin from another, or one dog from another. We naturally have this skill in abundance when we are dealing with other people. It helps a lot socially to be able to tell Jack from Bob. However we don't socialise with non-humans so we don't really need to be able to tell one from the other. Did you ever notice how the 2 green aliens in the Simpsons are *identical*???

The animals look the same only for us. Thus as humans, the individuals of any specie are unique and have a lot of differences, but we aren't able to recognize them.

all of the humans i've seen look the same, 1 head, two arms/legs, hands/feet, walk upright.

as for dogs, cats, birds, there are plenty of them which look different: hummingbird vs ostrich?

Saying that all dogs, cats look the same is kinda like saying all Japanese people look the same.
