The box says you can cover with a towel, but my husband says you need to wash everything. Is this true? Is it dangerous to eat on the dishes afterwards? Also what about open boxed foods in he cabinets?

Clean everything and throw out opened boxed food that was in the house unless you put it in a sealed plastic container or in the frig.

Towels are permeable, that is liquids go through them. Yes, please, for the safety of you and your husband do wash all the dishes, flatware, glasses, utensils. pots and pans. In the future, you might consider a less drastic and poisonous method of pest control.
Baits and traps will be less hazardous to you, and if you want to be safer still, locate where the pests are coming into the home and caulk those spaces. Look especially in areas were pipes come through walls in the kitchen, baths and laundry.
Keep the kitchen and floors very clean, keep kitchen trash covered and carry it out as soon as it is full. Do not leave food or dirty dishes out.
