Well, there is an accepted protocol for experimentation that is used way before humans come into the picture. But once all the trials have been completed, they usually pick from a pool of volunteers that wind up receiving a small payment for their contribution. These are usually college students and people that are unemployed and desperate for any kind of money.

Experiments are usually tried out with animals. Before human testing can be done the ethics committee will issue protocols to follow. All subjects must be given all the information about what the dangers are and then can be asked as volunteers or given a stipend.
