When used for frying, unsaturated is better as it doesn't get oxidised, however it adds to cholesterol (bad for heart) while unsaturated fat is OK for normal cooking and is very low or totally free of cholesterol (depending on the oil source).

Unsaturated fats; Particularly PUFA or Poly-unsaturated fatty acids as saturated acid excess is associated with unduly high blood levels of cholesterol, hypertension, diabetes and metabolic syndrome, all of which are associated with angina, obesity and strokes!
