Sincere effort and respect are the obvious answers, but that's not really what you're looking for, is it? You actually want gift ideas that will demonstrate that this teacher has positively impacted you.
I suggest that you CREATE something of quality that takes effort, will be useful, long-lasting, demonstrates respect for the teacher, and uses something you learned from him or her. For example, I know of a teacher who taught 6th graders a unit on light and optics. One student then used sunlight and a magnifying glass to burn the teacher's name into a wooden sign for his desk. The boy also added decorative details, using the same method. Then, he signed and dated the project. Finally, it was stained and varnished. That sign was displayed on the teacher's desk throughout his long career, so it was obviously very appreciated.
