I am remodeling my house and want to do textured walls and
ceiling. (knock down)

Now to give an honest answer.I usually use drywall compound thinned down with water when I shoot texture. For a knockdown, I usually use the next to largest orfice the came with my gun. Practice on a small space of your wall, as long as the "mud" is still wet, you can take your drywall knife and easily scrape it off. I tend to go from top to bottom of the wall, using a vertical sweep about 4 feet across. this allows me to come back with my knife[I use a 12" one] and do the knockdown. It is easier if you have someone comming behind you, but that is up to you.
Just a little practice, and it becomes pretty natural to you.
A little hint, spray some "Pam" on your knife first, and use a soft touch when knocking down the texture.

The problem with a drywall hopper is over time it wears out. Most of the time halfway thru the job. You are probably better off with a steel hopper. Drywall tends to be very brittle. If you are hopping on it it will break and become useless. Take a look in any store or catalogue and you will see most hopping gadgets are made of metal (pogo sticks for example).

only thing Ill add to "puzzled's" answer is the consistency of the thinned down drywall mud should be about like pancake batter!!!
